Use the Entire Chicken 

You can fry up an entire bird - not just the drumsticks. Slice the breasts into pieces and separate the thighs from the drumsticks. We also recommend letting the chicken sit for about 30 minutes at room temperature to ensure it cooks evenly.

Prepare Your Ingredients 

The ingredients you use matter, as they each have a distinct purpose. To start, get your buttermilk and flour ready. Fill a large plastic bag with flour, seasoned with paprika, salt and pepper. Paprika helps brown the chicken, while the salt and pepper add flavor.  Dip the chicken pieces into the buttermilk and then into the flour. Let them sit. Be sure to give this step a lot of time, as people sometimes rush through it. The chicken should sit on a cookie sheet until the flour has a paste-like texture. 

Use a Cast Iron Skillet 

Many people are surprised to learn that they don’t need to invest in a costly deep fryer to make fried chicken. A heavy-bottomed cast iron skillet is actually best because it retains heat and stays at a consistent temperature.  Use vegetable oil (olive oil will make the chicken taste bitter) and add as many pieces of chicken as your skillet can fit. When browned, reduce heat, cover the skillet and cook the chicken for 30 minutes.
